In Utah, particularly in the Mormon culture, there is a dish called funeral potatoes that is served at nearly every funeral. The original recipe contains grated or cubed potatoes, sour cream, cheese, butter, cream-of-something soup, cornflakes coated in butter, and more cheese. While this dish doesn’t taste quite like those funeral potatoes, it is a lighter and fresher version that doesn’t leave you feeling like you need to take a nap afterwards.
Horchata is a delicious beverage from Mexico that is typically made from rice milk, lots of sugar, and cinnamon. Somer has created a vegan version for you to enjoy while following her plan in The Abundance Diet.
